Ingredients

  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp cinnamon
  • 1 (11oz) bag of butterscotch chips

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In mixer bowl, cream butter and sugars. Add vanilla extract and eggs.
  3. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl. Add dry ingredients to wet on low and mix until just incorporated.
  4. Fold in the butterscotch chips.
  5. Cover the bowl with plastic wrap and refrigerate the dough for 30-45 minutes.
  6. Use a 1 tbsp scoop (heaping) and space 1 – 1 ½ inches apart.  Bake cookies in preheated oven for 10-12 minutes, until slightly golden around the edges.
  7. Allow cookies to cool for 5 minutes before removing from pan to rack.
