Elvis Cookies

These cookies are inspired by the famous Elvis Presley sandwich comprised of peanut butter, banana, and bacon. A super easy cookie dough to make and store. Be sure to comment if you make them and tag me on IG!

Ingredients

  • 1 cup butter (at room temp)
  • ½ cup light brown sugar
  • ½ cup white, granulated sugar
  • 1 egg yolk
  • ¾ cup mashed ripe banana (2-3 bananas)
  • 1 teaspoon vanilla extract
  • 1 teaspoon banana extract
  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 + ¼ to 1 + ½ cup real bacon bits (or chopped, cooked, and drained bacon)
  • 1 cup peanut butter chips

Instructions

  1. Preheat the oven to 350F and line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer, beat the butter and sugar on medium speed until smooth.
  3. Add the egg yolk, extracts, and mashed banana. Beat until well combined.
  4. In a separate bowl, whisk together the flour, salt, baking soda, and cinnamon.
  5. Add the dry ingredients to the bowl of the stand mixer and beat on a low speed until just combined.
  6. Add the bacon and peanut butter chips and briefly mix again.
  7. Using a 2 tbsp cookie scoop, portion out and shape the dough into balls with your hands.
  8. Place the cookie balls on the baking sheets leaving about 2 inches of space in between each.
  9. Bake for 11-14 minutes or until set and just starting to brown around the edges.
  10. Leave the cookies on the baking sheet for about 15 minutes before using a spatula to transfer them to a wire rack to cool completely.
