Cake box cookies are an easy way to get creative with flavors. I often use these either in a pinch or to inspire me to create scratch recipes once I’ve perfected a flavor profile. Enjoy!
Ingredients
1 box of coconut cake mix (15 oz)
1 box cream cheese, room temperature
1 egg
1 stick unsalted butter, softened
1 tsp vanilla
zest of 3 limes
juice of 1 lime
½ cup sweetened coconut flakes or shredded coconut
Instructions
Preheat the oven to 350°F. Line baking sheet with parchment paper.
Mix together cream cheese, butter, vanilla, and egg.
Mix in the cake mix, lime zest, and lime juice. Mix in the shredded coconut.
Use a 2 tbsp cookie scoop and bake for 18 minutes until the edges turn golden brown.
Allow the cookies to cool on the sheet for 2 minutes before transferring to a wire rack.
Notes
Optional: drizzle with melted white chocolate and margarita lime salt (mix with sugar 2:1). This makes it a coconut lime-a-rita cookie.
