Cake Box Cookies – Coconut Lime

Cake box cookies are an easy way to get creative with flavors. I often use these either in a pinch or to inspire me to create scratch recipes once I’ve perfected a flavor profile. Enjoy!

Cake Box Cookies – Coconut Lime

Ingredients

  • 1 box of coconut cake mix (15 oz)
  • 1 box cream cheese, room temperature
  • 1 egg
  • 1 stick unsalted butter, softened
  • 1 tsp vanilla
  • zest of 3 limes
  • juice of 1 lime
  • ½ cup sweetened coconut flakes or shredded coconut

Instructions

  1. Preheat the oven to 350°F. Line baking sheet with parchment paper.
  2. Mix together cream cheese, butter, vanilla, and egg.
  3. Mix in the cake mix, lime zest, and lime juice. Mix in the shredded coconut.
  4. Use a 2 tbsp cookie scoop and bake for 18 minutes until the edges turn golden brown.
  5. Allow the cookies to cool on the sheet for 2 minutes before transferring to a wire rack.

Notes

Optional: drizzle with melted white chocolate and margarita lime salt (mix with sugar 2:1). This makes it a coconut lime-a-rita cookie.
