Ingredients
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- 1 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- ½ tsp cinnamon
- 1 (11oz) bag of butterscotch chips
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In mixer bowl, cream butter and sugars. Add vanilla extract and eggs.
- Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl. Add dry ingredients to wet on low and mix until just incorporated.
- Fold in the butterscotch chips.
- Cover the bowl with plastic wrap and refrigerate the dough for 30-45 minutes.
- Use a 1 tbsp scoop (heaping) and space 1 – 1 ½ inches apart. Bake cookies in preheated oven for 10-12 minutes, until slightly golden around the edges.
- Allow cookies to cool for 5 minutes before removing from pan to rack.
